Job Description

The Head Chef at Presbyterian University of East Africa (PUEA) Restaurant is responsible for overseeing the culinary operations and ensuring the delivery of high-quality food services to the university community. This role requires a creative and skilled professional who can lead a team, manage kitchen operations, and maintain the highest standards of food preparation and presentation.

Qualifications

  • Culinary Arts degree or relevant certification is preferred;
  • Proven experience as a Head Chef or similar role in a high-volume food service establishment;
  • In-depth knowledge of various culinary techniques, cooking methods, and international cuisines;
  • Strong leadership and team management skills, with the ability to inspire and motivate kitchen staff;
  • Excellent organizational and time management skills to handle multiple tasks and meet deadlines;
  • Knowledge of food safety and hygiene regulations;
  • Creativity and ability to develop innovative menus while considering dietary requirements;
  • Strong communication skills to collaborate with various stakeholders, including kitchen staff, front-of-house personnel, and management;
  • Ability to work under pressure and maintain a positive attitude in a fast-paced environment;

Duties and Responsibilities

The Head Chef shall be responsible for and perform functions which include but not limited to the following:

  • Plan and develop menus in collaboration with the catering manager and university management and nutritionists to meet the dietary needs and preferences of the university community;
  • Manage the overall culinary operations, including food preparation, cooking, and presentation;
  • Supervise and train kitchen staff, ensuring adherence to standardized recipes, food safety, and hygiene protocols;
  • Monitor food quality, portion sizes, and presentation to ensure consistency and customer satisfaction;
  • Maintain inventory levels, order supplies, and manage the cost of ingredients to ensure efficient kitchen operations;
  • Collaborate with the purchasing department to source fresh and high-quality ingredients;
  • Stay updated on industry trends, new cooking techniques, and menu innovations to enhance the dining experience at PUEA Restaurant;
  • Ensure compliance with health and safety regulations, including sanitation and cleanliness standards;
  • Collaborate with the service staff to coordinate food service and address any customer concerns or special requests;
  • Participate in special events, culinary competitions, and other relevant activities to promote PUEA Restaurant and showcase culinary excellence;

TERMS OF SERVICE

The terms of service for the positions will be on Contract Terms renewable based on satisfactory performance.
